The decoration is surprisingly easy, just set aside a few moments to create those swirls. If time is of the essence, just layer apple slices in a sprial on the top, it looks beautiful and tastes delicious too…

Apple Marzipan Spice Cake

Ingredients

For the Cake

• 150g Unsalted Butter, room temperature
• 200g Caster Sugar
• 1tsp Vanilla Extract
• 4 Large Free-Range Eggs, room temperature
• 200g Plain Flour
• ½ tsp Salt
• 1 ½ tsp Baking Powder
• ½ tsp Cinnamon, Ground
• ½ tsp Ginger, Ground
• 2 Cloves, ground
• 2 Cardamom Pods, seeds removed and ground
• 100g Marzipan, cut into small cubes

For the Topping

• 3 Apples, very finely sliced
• 25g Unsalted Butter, melted
• 50g Caster Sugar

Instructions

1. Line a 20cm Springform pan with baking paper, grease and flour, set aside in the fridge. Preheat oven 160C
2. Cream the butter, sugar and vanilla together for 5-8 minutes or until light, pale and fluffy. In a separate bowl, whisk the flour, salt, baking powder and spices until homogenous.
3. Add the eggs to the butter mixture, one at a time, beating between each addition to incorporate. Add the flour and gently mix, taking care not to overmix or your cake will be chewy.
4. Pour the mixture into your prepared tin and gently spread out. Dot the marzipan pieces on top then layer over the apple slices, brush with the melted butter and sprinkle with the sugar. Bake for 50-60 minutes or until a skewer comes out clean. Allow to cool in the tin for 5 minutes before turning onto a wire rack.
5. Serve with lashings of cream or custard
