Ingredients

For One Drink

• 30ml Aperol
• 30ml Citrus Forward Gin
• 20ml Yuzu Juice
• 20ml Peach Syrup
• 200ml Tonic Water

Aperol Foam

• 60ml Aperol
• 25ml Lime Juice
• 25ml Peach Syrup
• 1tsp Strawberry Powder (blitzed freeze-dried strawberries)
• 1 Egg White
• 0.6g Xanthan Gum
• 2 Siphon Chargers

Instructions

1. Begin with the foam. Add all ingredients to a bowl and whisk to combine, chill in the fridge for at least 4 hours.
2. When ready, add to your siphon and charge with the two chargers, shake vigorously.
3. Add the ingredients for the drink to a chilled mixing glass, leaving the tonic behind and add 3 ice cubes, stir clockwise for 30 seconds.
4. Strain into a chilled glass and top up with tonic. Siphon some foam on top and serve immediately.
