Courgette & Lemon Salad with Lovage Mayo

The soft, verdant herbs of summer bring with them a cacophony of blooms, some more beautiful than others, but all have their place in the kitchen. Lovage imparts a beautiful sweet, celery note to the mayo, the perfect foil to zesty lemon. The flavours are as bright as the dish itself, just delicious.

Courgette & Lemon Salad with Lovage Mayo

Ingredients

For the Salad

• 4 Firm, courgettes, grated or spiralised.
• 3 lemons, zest & juice of 1, 2 finely sliced.
• Handful Fresh Rocket
• 3 Spring Onions finely sliced.
• Good Drizzle Olive Oil
• Sea salt & Cracked Black Pepper
• Fresh Lovage leaves and Chamomile flowers to serve.

Lovage Mayo

• 2 egg Yolks
• ½ Garlic Clove, minced
• 1 tsp Dijon Mustard
• 2tsp Lemon Juice
• 200ml Rapeseed Oil
• 150ml Grassy olive Oil
• 20g Fresh Lovage, leaves picked & finely chopped.
• Sea Salt & Cracked Black Pepper to season.

Instructions

1. Begin with the mayo. Whisk the egg yolks, garlic, mustard, and lemon juice until smooth. Combine the oils in a jug.
2. Drip by drip, add the oils, whisky to emulsify as you go, don’t be tempted to rush this or it will split. If it does split, you can sometimes rescue it with one or two drops warm water.
3. Once the oils have been added, add 1tbsp warm water to loosen it, along with the lovage. Taste and add salt and pepper to your liking. Set aside.
4. Combine the courgettes with the rocket and spring onions. Drizzle over the olive oil, lemon juice and some salt & pepper. Tumble everything together then add the lovage leaves and flowers. Bundle onto plates and serve with the lovage mayo on the side.
