Some ingredients require patience. Upon returning from Tuscany in April with Truffle Honey, I just knew exactly what I wanted to do with it. The only problem is, I knew I would have to wait.

You see, I believe in seasonality, eat when things are in their prime. Nature dictates my diet, as and when the seasons change, so do my ingredients.

So I invested my willpower and waited for my figs to ripen and the fennel to flower, and gosh, life has never been so sweet!

Believe me, good things DO come to those who wait….
