Ghost Pumpkin, Pear & Nutmeg Soup

There is something so comforting about white food. Perhaps its reminiscent of childhood where white bread sandwiches were pure joy, the crusts discarded for their beige intrusion. As we age, we learn that colour brings with it nutrition and variety, but the seeds of joy that is to be found from white will remain deep in our souls……

Ghost Pumpkin, Pear & Nutmeg Soup

Ingredients

• 800g White Flesh Pumpkin, peeled roughly chopped
• 200g Pears, cored & roughly chopped
• 1 White Onion, peeled and finely chopped
• 1 Stick Celery, finely chopped
• 3 Cloves Garlic, chopped
• 2 tbsp Olive Oil
• 800ml Vegetable Stock
• 150ml Coconut Cream
• ½ Nutmeg, grated
• Sea Salt & Cracked Black Pepper to taste
• Pear Chips & Fresh Chives to serve

Instructions

1. Add the oil to a large saucepan and heat over a medium heat. Add the onions, celery, and garlic, reduce the heat a little and sweat for 10-12 minutes, or until sweet and translucent.
2. Add the Pumpkin & Pears and cook 5 minutes more, stirring so nothing caramelises.
3. Add the stock and increase the heat to bring to a boil. Simmer for 15 minutes or until the pumpkin is tender to the point of a knife.
4. Remove from the heat and add the coconut cream and nutmeg. Using a stick blender, blend until smooth.
5. Taste and adjust the seasoning with salt & black pepper. Taste again
6. Divide between 4 large bowls, garnish with pear chips & chives and serve.
