Ingredients

• 50ml Cambridge gin
• 10ml Lemon Lavender Syrup
• 5ml Lemon Juice
• Soda Water & Ice to Serve

For the Syrup

• 100ml water
• 100g Caster Sugar
• 1tbsp Culinary Lavender Buds
• 2 Strips Lemon Zest

Instructions

1. Begin with the syrup, add the sugar and water to a small pan and heat over a low heat to dissolve. Once dissolved, increase the heat and bubble to a syrup, 3-5 minutes. Remove from the heat and add the lavender and lemon zest.
2. Allow to cool overnight then strain into a sterile bottle, store in the fridge.
3. When ready, add the syrup, gin, and lemon juice to a mixing glass with 3 ice cubes and stir clockwise for 30 seconds, or until the sides of the glass feel chilled. Strain into a glass with some ice, top with soda and serve.
