Lychee & Pink Pepper Martini

Delicate, sweet and floral, even a rose has throns so this dainty serve has a little kick of pink pepper, just to keep your tastebuds alive. The perfect combination for an elegant serve, ideal for hosting friends..

Ingredients

For One Drink

• 50ml Floral Gin
• 25ml Lychee Liqueur
• 15ml Lychee & Pink Pepper Syrup
• 10ml Lime Juice
• 15ml Dry White Vermouth
• Ice to Stir

Lychee & Pink Pepper Syrup

• 1 Can Lychees, drained
• 50g Sugar
• 1tsp Pink Peppercorns

Instructions

1. Put a mixing glass and martini glass in the freezer to chill
2. Begin with the syrup, add the juice from the can of lychees (keepo the lychees to garnish) and the sugar to a small pan with the pink peppercorns. Dissolve overa low heat then bring to a boil. bubble for 3-5 minutes until syrupy then allow to cool and infuse.
3. Strain into a sterile bottle and store in the fridge.
4. When ready, take the mixing glass from the freezer and add all the ingredients along with 3 ice cubes, stir for 20 seconds then taste some of the mix on your hand, if the alcohol burns, keep stirring, if it tastes watery you have gone too far, look for a balanced mouthfeel.
5. Strain into your chilled glass and garnish with lychees before serving. Roses also look beautiful.
