This recipe is born of thorned, stolen brambles, primal and swollen in the late summer heat. Its namesake my wonderful friend, as free and wild as the berries themselves. It sings to her love of all things bitter, yet tainted with a sweetness that echoes her very soul.

This recipe is born of thorned, stolen brambles, primal and swollen in the late summer heat. Its namesake my wonderful friend, as free and wild as the berries themselves. It sings to her love of all things bitter, yet tainted with a sweetness that echoes her very soul.

Ingredients

For One Drink

• 30ml Campari
• 25ml sweet Vermouth
• 5ml Pineapple Sage Syrup
• 15ml Bramble Juice, squeezed fresh from brambles and strained.
• Prosecco to top up.
• Ice to serve.

Pineapple Sage Syrup

• 100g Caster Sugar
• 100ml Water
• 6 Pineapple Sage Leaves (or use purple sage)

Instructions

1. Begin with the syrup. Add the sugar and water to a small pan and heat over a low heat to dissolve. Once dissolved, increase the heat and bubble for 3-5 minutes or until syrupy, remove from the heat, add the sage, and allow to cool completely.
2. Once cool, strain and chill in the fridge.
3. When ready, add the Campari, vermouth, sage syrup, and bramble juice to a glass with 3 ice cubes and stir clockwise for 15 seconds to chill. Top with more ice
4. Pour the prosecco over the back of a spoon to prevent foaming, give it a gentle stir and serve immediately.
