Ingredients

For One Drink

• 50ml Knightor Rosé Vermouth
• 45ml Prosecco
• 45ml Soda
• 10ml Thyme & Pink Pepper Syrup
• Thyme Sprig, Rose Petals & Pink Peppercorns to garnish
• Ice to serve.

Thyme & Pink Pepper Syrup

• 100g Caster Sugar
• 100ml Water
• 1tbsp Pink Peppercorns
• 2 x 10cm Thyme Sprigs

Instructions

1. Begin the day before with the syrup. Add the sugar and water to a small pan and dissolve over a low heat.
2. Once dissolved, add the pink peppercorns, and increase the heat to a boil. Boil for 3-5 minutes, or until syrupy and remove from the heat.
3. Add the thyme and allow to infuse at room temperature overnight. The next morning, strain, discarding the solids and refrigerate, this will keep in an airtight, sterile jar for 4 weeks.
4. When ready to serve, add the vermouth and syrup to a glass with two cubes of ice, stir for 15 seconds to combine then add more ice. Pour the prosecco over a bar spoon into the glass to prevent foaming then add the soda.
5. Garnish with pink peppercorns, rose petals and thyme and serve.
