Tomato & Elderflower Salad

As Mother Nature envelops us in her balmy caress, the flora swell and bloom in the heat. Nothing sings more of summer, than fresh, sun warmed tomatoes, dripping in extra virgin olive oil, kissed with the sweet scent of Elderflower petals, Elderflower Vinegar and salt.

Good ingredients need little adornment to shine.

Ingredients

• 300g Ripe Tomatoes, cut
• 2tbsp Elderflower Vinegar
• 1/2 tsp Sea Salt Flakes
• 1/4 tsp Golden Caster Sugar
• 1/4 tsp Cracked Black Pepper
• Sprinkle of Elderflowers, stems removed

Instructions

1. Mix all ingredients in a bowl, sit in the sun for 5 minutes to warm. Serve with plenty of crusty bread
