Lemon & Artichoke Orzo with White Beans

Ingredients

• 2tbsp Olive Oil
• 1 Onion finely sliced.
• 2 Cloves Garlic, minced.
• 115g Dried Orzo Pasta
• 500ml Vegetable Stock
• 200g Marinated Artichoke Hearts
• 1 Jar Cannellini beans, drained.
• 1 lemon, Zest & Juice
• 50g Fresh Baby Spinach
• 100g Tender Asparagus, chopped.
• 50g Vegan Parmesan, grated.
• Sea Salt & Cracked Black Pepper to season.
• Fresh Spring herbs to serve.

Instructions

1. Heat the oil in a large pot over a medium high heat, add the onion and a splash of water, cover with a lid, and sweat for 10 minute or until soft and translucent. Add the garlic and lemon zest, along with the orzo and toast for 1-2 minutes.
2. Pour in the stock with a pinch of salt and bring to a boil, cook for 8-10 minutes, or until the orzo is al dente, the liquid should have been absorbed, if it begins to look dry, add a little more boiling water. 3 minutes before the cooking is done, throw in the asparagus.
3. Add the spinach and cook until wilted, 30 seconds is fine. Remove from the heat and stir through the beans, artichokes, parmesan and lemon juice, taste and adjust the seasoning with salt and cracked black pepper.
4. Garnish with herbs and serve just above room temperature with a crisp salad.
