Seafarers Grapefuit Martini

Ingredients

For One Drink

• 60ml Dry Gin, we use Rosemullion Seafarers Gin
• 10ml Dry White Vermouth
• 10ml Grapefruit Syrup
• 5ml Grapefruit Juice

Grapefruit Syrup

• 100g Caster Sugar
• 80g Water
• 20g Fresh Grapefruit Juice
• 1 large twist grapefruit zest

Instructions

1. Begin with the syrup, add all ingredients to a small pan and dissolve the sugar over a low heat. Bring to the boil and boil for 3-5 minutes or until syrupy. Remove from the heat and allow to cool to room temperature before straining through a muslin and storing in a sterile bottle in the fridge.
2. Chill a martini glass and mixing jug in the freezer, temperature is imperative. Add all ingredients to the mixing jug with 3 ice cubes. Stir for 15 seconds clockwise and add a drop to the back of your hand (here the flavour is neutral) taste, if the alcohol burns, keep stirring, but if it tastes watery you have gone a little too far, balance is key.
3. Strain the mixture through a hawthorn strainer from a height to aerate the mixture and add mouthfeel.
4. Garnish with a slice of pink grapefruit and a sprig of fennel, bash the fennel into your palm first to express the volatile compounds giving aroma as you sip.
