Rich, unctuous chocolate ice cream, studded with marshmallows, almonds and chocolate chips, the ultimate decadence. This recipe uses a no-churn method to make this simple to whip up for hungry family and friends.

Ingredients

• 115g Lindt 70% Chocolate plus 50g Finely chopped.
• 60g Lindt Extra Creamy Milk Chocolate
• 240g Whole Milk
• 1 Can Condensed Milk, full fat (394g)
• 1tbsp Cocoa Powder
• 2 tsp Vanilla Bean Paste
• ½ tsp Sea salt Flakes
• 480g Double Cream
• 90g Mini Marshmallows, snipped with scissors.
• 100g Roasted Almonds, sliced.
• 100g Glacé Cherries, chopped

Instructions

1. Chop both chocolates and place in a heatproof bowl (reserve the 50g for later). Add the milk and cocoa to a small pan and whisk over a medium heat until steaming. Pour over the chopped chocolate and stand for 3-5 minutes.
2. Gently stir the chocolate mixture until smooth then add the condensed milk, vanilla, and salt. Set aside.
3. Whip the double cream to soft peaks then fold through the chocolate mixture, followed by the remaining chopped chocolate, almonds, glacé cherries and marshmallows.
4. Spoon into a freezer proof container and cover with cling film, freeze for 4-6 hours (ideally overnight) until set.
5. Stand the ice cream for 10-15 minutes at room temperature before scooping and serving.
