Ingredients

• ¼ Cucumber, chopped and frozen
• 30ml Gin
• 30ml Elderflower liqueur
• 10ml Lemon Verbena Syrup
• 10ml Lemon Juice

Lemon Verbena Syrup

• 100gCaster Sugar
• 100ml water
• Handful Lemon Verbena Leaves

Instructions

1. Begin with the syrup. Add the sugar and water to a small pan and heat over a low heat to dissolve. Increase the heat and bubble for 3-5 minutes, or until syrupy. Remove from the heat and add the lemon verbena, leave for 6 hours then strain into a sterile bottle and refrigerate.
2. When ready, add all ingredients for 1 drink to a blender and blend to a slush. Pour into a chilled glass and serve immediately.
