A Riff on a classic, it is so much more than the sum of its parts. I deviate from the classic bourbon and use Scotch Whisky as a nod to my heritage. The Venetian Aperitivo Select is a touch more nuanced than the classic Campari whilst the spiced cranberry syrup negates the need for as much sweet vermouth. It is smooth, balanced and the perfect way to slide into the holidays.

Spiced Cranberry Boulevardier & Paired Mocktail

It is smooth, balanced and the perfect way to slide into the holidays.

Ingredients

Spiced Cranberry Syrup

• 200ml Cranberry Juice
• 150g Caster Sugar
• 3 Star Anise
• 8 Cloves
• 1 Cinnamon Stick
• ¼ tsp Sichuan Peppercorns

For One Boulevardier

• 35ml Single Malt Whisky (or use a blend)
• 25ml Select Aperitivo (Or use Campari)
• 20ml Sweet Vermouth
• 10ml Spiced Cranberry Syrup

For One Mocktail

• 20ml Spiced Cranberry Syrup
• 5ml Fresh Ginger Juice
• 10ml Fresh Orange Juice
• 200ml Tonic Water to top up
• Cranberries, Orange Slices and Spices to Garnish

Instructions

1. For the Boulevardier
2. Begin with the syrup. Add the cranberry juice and sugar to a small pan with the spices. Heat over a low heat to dissolve the sugar then increase the heat. Boil for 3-5 minutes or until syrupy then set aside to infuse for 2 hours. Strain and allow to cool before decanting into a bottle and storing in the fridge.
3. When ready, add a single large ice cube to a glass. In a mixing glass, add 3-4 ice cubes and build the serve in the order it is written. Stir clockwise for 3 seconds then strain into your glass. Garnish with the fruit and spices and serve immediately.
4. For the Mocktail
5. Add the syrup, ginger juice & orange juice to a glass with ice, top up with tonic, garnish with cranberries &spices and serve immediately.
