Raspberry & Rose G&T

The perfect summer tipple. Floral, fruity, and just a touch bitter. Perfect for al fresco drinks with friends.

Ingredients

Rose Syrup

• 100ml Water
• 100g Caster Sugar
• 1tbsp Dried Culinary Rose Petals
• ¼ tsp Rose Water

For One Drink

• 50ml Floral Gin
• 2tsp Rose Syrup
• 200ml Elderflower Tonic
• 4 dashes Peychaud’s Bitters
• Ice to serve.

Instructions

1. Begin the day before with the syrup. Add the sugar and water to a small pan and dissolve over a low heat.
2. Once dissolved, increase the heat and boil for 3-5 minutes or until syrupy. Remove from the heat and add the rose petals and rose water.
3. Allow to infuse at room temperature for 4-6 hours. Once cold, strain out the petals and discard. Decant the syrup into a bottle and store in the fridge.
4. When ready, add the gin, syrup and bitters to a glass and stir clockwise with 3 ice cubes for 30 seconds to chill. Add more ice and pour the tonic over a bar spoon to prevent foaming.
5. Garnish with flowers and berries and serve immediately.
