Rose & Yuzu Lemonade

Under the Floral Spell.

This time of year, has my heart, surrounded by blooms, herbs, fruits and vegetables, swollen with the warmth of the sun, I find myself imparting their flavour into all I eat and drink.

This Rose Lemonade is simple to make yet decadent to consume.

Rose & Yuzu Lemonade

This time of year, has my heart, surrounded by blooms, herbs, fruits and vegetables, swollen with the warmth of the sun, I find myself imparting their flavour into all I eat and drink.This Rose Lemonade is simple to make yet decadent to consume.

Ingredients

Rose Syrup

• 100ml Water
• 100g Caster Sugar
• 1tbsp Dried Culinary Rose Petals
• ¼ tsp Rose Water

For One Drink

• 2tbsp Lemon Juice
• 1tbsp Yuzu Juice
• 1tbsp + 1tsp rose Syrup.
• Soda Water & Ice to top up.

Instructions

1. Begin the day before with the syrup. Add the sugar and water to a small pan and dissolve over a low heat.
2. Once dissolved, increase the heat and boil for 3-5 minutes or until syrupy. Remove from the heat and add the rose petals and rose water.
3. Allow to infuse at room temperature for 4-6 hours. Once cold, strain out the petals and discard. Decant the syrup into a bottle and store in the fridge.
4. When ready, add the syrup, lemon and yuzu juice to a glass and stir to mix, add ice and soda, give it one more stir and enjoy amongst the blooms and the bees.
